Re-growable Greens
Wheat grass is a perfect renewable microgreen. It is a fast grower and provides wonderful fiber to any recipe. Whether chopped in a salad, baked in bread, or blended in a smoothie, wheat grass can be versatile and sustainable!
Wheatgrass grow well in soil and in a deeper container. They have longer roots and since the objective is to regrow them multiple times, it’s best to grow them in a nutrition rich soil. Shown here are the re purposed single use glass containers of Oui yogurt. Painting them and using them as small planters for the wheatgrass work great for edible decorations.
Wheatgrass is a powerhouse of nutrition. For long it has been used as a staple in smoothies and green juices. With it’s fibrous nature and not so flattering taste it is usually looked at distastefully as an ingredient. Commonly it is used as juice shots like a medicine. The good news is, large quantities of wheatgrass is not required to enhance the nutritive value of any recipe. Even a smaller amount as less as 8 gms which is equivalent to 1 tablespoon can provide an incredible nutritive boost (1).
You can try different ways to consume the wheatgrass if juicing is not desirable. A couple of ideas are listed below. The images are linked to the recipe.
If the pea shoots are harvested with sharp, clean shears of scissors, the roots shall remain healthy and new shoots should appear. This process can keep being repeated until the plant is not able to sustain itself. Re-growable greens are perfect for those not willing to replant new seeds so often.
