Caprese Panini (toasted or cold)

Well, if you have explored this website, you would have realized that caprese is my favorite food. In-fact I can eat 365 of them in a year, which means… well you know what that means :)

The soft, fresh, supple mozzarella cheese slices, juicy tomatoes and the deep aromatic sweetness of basil are a winning combination. Through sprkinling a dash of salt and some freshly crushed black pepper, and layering ingredients in between light sourdough bread slices, you have the most delectable lunch in your hands.

Spruce the sandwich with any microgreens by tucking the subtle broccoli, stringy chia, spicy radish or kale, in between the stack of mozzarella and tomato.

I also like to use basil pesto as a spread when fresh basil is not available. My brother substitutes it with hummus and my sister likes just plain butter. It’s a versatile recipe and can be customized to suit your whim or the mood of the day. 

On a hot summer day when I am craving a light lunch, I have it cold. But during the cold winter, slow toasting the sandwhich in a panini maker till the cheese melts perks up my day.

Along with the variations for this recipe, try it on a toasted bagel or a croissant, and do not forget to add the microgreens!
